MMXXV Edition III, Meunier French Oak Cask, 59.7% ABV
Nose: Once settled, an intriguing savoury creaminess emerges alongside freshly brewed black tea, restrained red berries, bitter menthol, and fresh mint.
Palate: Dry and structured with restrained sweetness. Red berries lead into black tea and gentle oak, giving the spirit an elegant, almost savoury character. The texture is creamy despite the dryness.
Finish: Long, dry, and refined. With a few drops of water, the palate becomes noticeably sweeter, while the finish develops an attractive savoury creaminess that complements the lingering red fruit and subtle oak.

Next up, a unique cask finishing I’ve yet to come across: an ex-botrytis cask by Baroque at 49.5% ABV.
“It begins in the stark geometry of an abandoned paper mill—dry, brittle, almost skeletal paper fragments breaking apart at the slightest touch. Then, a sudden surge of umeshu, fresh and verdant, a fleeting innocence before the inevitable descent. The green fades to scarlet, lush foliage bleeding into a carnivorous dusk. The air thickens with iron and flesh—Bloody Mary in hand, primal hunger awakened. A prune shadow closes in, dense and brooding before fading away ever so slowly “
